Vegan recipe – Pasta with zucchini

Another simple and fast preperation of pasta, this time very italian style. =)
INGREDIENTS:
Zucchini
Strained tomatoes
Himalayan salt
1/2 teaspoon of dried vegetables (Vegeta)
Italian spices (I have some sort of mix)
Pasta

COOKING
Cut zucchini on small dices, add some salt and dried vegetables (Vegeta) and roast them on some olive oil. When they soften add the amount of pasta you want, some strained tomato and so much water that it covers almost all pasta. Cook for as long as necessary for pasta to be cooked, but don’t forget to mix few times so everything gets cooked equaly. Right before ending add italian spices.

So, totally simple. =)

Vegan recipe – Pasta with vegetables

Today I wanted to make a simple and fast lunch, so I kinda just opened the fridge and checked what I have. This is what I came up with, but you can change vegetables and use the amount you think fits best.

INGREDIENTS:
1/2 leek
Cauliflower
Broccoli
Carrots
Strained tomatoes
Himalayan salt
1/2 teaspoon of dried vegetables (Vegeta)
Oregano
Pasta

COOKING
Cook vegetables on steam (pour just a bit of water so it doesn’t stick to the bottom) or use some olive oil to cover the bottom of the bowl. Add salt and dried vegetables. Cook for about 5-10 minutes and then add pasta and some water so the pasta is almost covered with it. Than add some strained tomatoes and oregano. Mix couple of times, so all the pasta gets cooked well. If it everything starts to stick to the bottom just add a little more water. Cook until pasta is ready.

That’s it! Some sort of Italian style pasta with vegetables. =) I hope you’ll like it!

Vegan recipe – Risotto

This recipe is for 2 people. If you like a lot of rice you can add a bit more and use a bit less vegetables.

INGREDIENTS:
1/2 cup of rice (I use brown rice)
1/2 cup of strained tomatoes
1 zucchini
2 carrots
150g of broccoli (aprox.)
150g of cauliflower
Himalayan salt (aprox. 1 teaspoon)
1/2 teaspoon of dried vagetables (Vegeta)
1/2 teaspoon of dried red pepper
1/4 teaspoon of curry
1 teaspoon of marjoram

COOKING
The rice I use takes about 30minutes to cook, so I put it in different bown and cook it. I cook it in this bowl for about 15-20 minutes. Meanwhile I cut all the vegetables (use as much as you like and the ones you like, I just wrote the ones I use). I put vegetables in other bowl and add salt, dried vegetables and some water so it doesnt stick to the bottom. I let it cook for about 5 minutes and then add strained tomatoes, red pepper and curry. I put the rice I cooked before in the same bowl as the vegetables and let it cook for about 10minutes more. I add marjoram few minutes before ending. And that is it, risotto is cooked.
