I found this recipe online and since it’s a season of asparagus I decided to try it out. Well I didn’t follow the recipe exactly, since I should add garlic, which I don’t usually use or even have at home. So I replaced it with leek and also I added some carrots, because I like baked carrots and I thought the taste of it will probably fit.
INGREDIENTS:
New potatoes
Asparagus
Carrots
Leek
Italian seasoning
2-3 table spoons of olive oil
Salt
Parsley
PREPARATION
Preheat oven on 200°C (400F). Meanwhile cut the potatoes on smaller blocks, cut the leek, carrots and asparagus. Mix it in a bowl together with italian seasononing (mix of spices like basil, origano…), salt and olive oil.
Grease a roasting pan, casserole dish or sheet pan or use baking paper instead (that’s what I did) and put all the vegetables on it.
Roast it for about 35-45 minutes until potatoes are tender. Garnish with fresh parsley, but dried one worked ok for me.
