Vegan recipe – Polenta pastry

This pastry is a great snack or it can even be your dinner. I really like it. =)
INGREDIENTS:
Polenta (corn semolina)
Raisins
Apples
Sugar (I use stevia or fructose)
Cinnamon

PREPARATION
First you peel some apples, it’s up to you to decide how many. Then you grate them and add one or two teaspoons of cinnamon, it depends on amount of apples you used. Than add some raisins, again as many as you would like and add some sugar, but if you put a lot of raisins I think one table spoon should be enough.
In another bowl cook polenta; about 300g should be enough, but again it depends how much pastry you would like to make, you can add more or less and try to experiment on ratio so you’ll find the one that fits your taste. If you want you can cook it in soy or rice milk so it will get a bit different taste.
Mix everything together and put it in baking tray. Bake it in the oven on 180°C for about 15 minutes, though I noticed it depends a lot on the oven…
