Vegan recipe – Pasta with leek and zucchini

Here is one of the recipes I just tried and it turned out really good. Recipe is for 2 people.

INGREDIENTS:
1 zucchini
1/2 leek
Olive oil
Himalayan salt
1/2 teaspoon of dried vegetables (Vegeta)
Oregano
50g tofu
Pasta

COOKING
Use some olive oil to cover the bottom of the bowl and add zucchini and leek. Add salt and dried vegetables. Roast for about 5 minutes and then add tofu and pasta. Add some water so the pasta is almost covered with it. Mix couple of times, so all the pasta gets cooked well. Add some oregano. If it everything starts to stick to the bottom just add a little more water. Cook until pasta is ready.
