Vegan recipe – Couscous dumplings

Dumplings or however you call them, we all know them. Some ball of dough in which there is some fruit (ok, sometimes there is a cream or something else). My boyfriend ate some vegan plum couscous dumplings in Croatia and so we decided to try and make them ourselves too.

INGREDIENTS:
1 cup of couscous
2 cups of water
Spelt groats
Wholegrain flour
Cinnamon
Sugar
Plums, apricots, cherries or fruit of your choice

COOKING
At first we cook couscous in boiling water and we leave it to get cold. Then we mix together couscous, groats and flour so we get some sort of mass that we can shape. We make a shape of cups with it and we put wanted fruits inside. We put some cinnamon and sugar (we used stevia) over the fruits and than we close the cups so we get a round shape of dumplings. For few minutes we put them in boiling water, but not for too long, because they can fall to pieces.
When dumplings are cooked you can put some more sugar over them. Some people put some roasted crumbs over it, but we grinded some flax seed and put it over. We liked it.

We made some couscous dumplings! =)
