Vegan recipe – Almond ‘potica’

Slovenian traditional dish. Usually, filled with walnuts, but this time with almonds and vegan. =)

INGREDIENTS:
For the dough:
– 1 dcl soy milk
– A package of dry yeast
– 250 g of flour
– 40 g sugar
– 0.5 dcl vegetable cream

For the filling:
– 200 g ground almonds
– 1 dcl soy milk
– 0.5 dcl vegetable cream
– 1 tablespoon of cocoa
– 50 g sugar
– raisins

PREPARATION
• Filling: Put together almonds, milk and cream and remaining ingredients for the filling and quickly cook them.
• Dough: Put the yeast in a little bit of warm milk and let it rise in some place warm. Mix dry ingredients in a bowl and make like a hole in the middle, where you put all the wet ingredients. Knead well and roll.
• Spread the filling over the rolled dough and roll it up (not spread the filling all the way to the edge for easier finish).
• Place potica in a greased baking dish or on a baking paper and put it for half an hour in the oven, preheated to 50 °C, so the cake rises. Then set the oven at 200°C and bake for 20 minutes. The next 20 minutes reduce the temperature to 150°C. Be aware that the cooking time depends on the type of oven, so be careful and, if necessary turn the oven off before or bake longer.

    What is vegetable cream?

      You can buy it in store. It can be rice cream or soy cream, it is similar like the non-vegan sweet cream. I guess I would said better if I used word whip. My bad. =)
